Authentic Recipes: Taste of Honduras — Garifuna Style

Orel Emile Gentle Steward traded his life as a chef on a cruise ship to be a chef in his hometown of Sambo Creek, Honduras. Sambo Creek is one of many colorful Garifuna villages that dot the north coast of Honduras. The Garifuna are an AfroCaribbean group who live on some of the most beautiful palm-fringed beaches in Central America. The friendly town, the fresh salt air, the gentle breeze, and the Caribbean Sea that spreads to the horizon made it easy to understand why Chef Orel returned to Sambo Creek.

Some of Best Photos from El Salvador

I finally had an opportunity to look back and reflect on a great trip to Central America during the earlier part of the month for the Centro America Travel Market held in El Salvador. The trip included rubbing shoulders the Miss Teen Universe contestants, Miss Universe Guatemala (Lourdes Figueroa), and the President of El Salvador, Mauricio Funes. Actun Tunichil Muknal, Belize, Caves and Superstition

My guide, Jose, looked around at me and put his finger to his lips, “Shh, can you feel the spirits?”

I held my breath. Human skeletons and cracked pottery lay scattered on the ground. Obsidian blades that were once used to pierce the tongue and genitals sat near a slate altar at the far wall. We were more than a kilometer underground. I was in Actun Tunichil Muknal, Belize’s “Cave of the Stone Sepulchre.”

Honduras was the first place I had visited in a long time where I had done no legwork, no advanced planning on my part. I didn’t pick up a book or ask the advice of friends. Don’t get me wrong, I did have a trip planned out, but I didn’t do all the normal things I would that created preconceived notions. I just got on the plane and landed in San Pedro Sula and just looked at whatever there was to see. Honduras has plenty for the visitor to see. Travel Central America, Costa Rica Photos
